At Tewkesbury Park, we like to put a spin on the classics.
So this Pancake Day, we’ve gone for the savoury option, topped with tomato and mint chutney. And because we like to cater for everyone here at Tewkesbury Park, we’ve made them vegan too.
About our Vegan Pancake Recipe
This delicious creation from Anuj, our head chef here at Tewkesbury Park, has been a firm favourite “small plate” option on our menu since November. And, although the general rule of thumb for chefs is to never share their secrets, Anuj has kindly given us the recipe below.
If the prospect of cooking the below seems a touch too daunting, you can always book a table in our Mint Restaurant to devour your stack of vegan pancakes straight from the chef himself. With the added bonus of no dishes to do afterward of course.
You’ll also be pleasantly surprised as to just how easy the method for our vegan pancakes actually is.
Spiced gram flour pancakes with tomato and mint chutney
For the gram flour pancake:
• 100gms gram flour
• ½ Red onion finely chopped
• 2 cloves garlic finely chopped
• 1 small piece ginger finely chopped
• A pinch of cumin and coriander seeds
• ½ lemon juice
• 1tsp of mild curry powder
• 1 tsp of turmeric and coriander powder
• 2 tomatoes deseeded and finely chopped
• Few sprigs of fresh coriander & mint finely chopped
• 1 ½ tsp baking powder
• Salt to taste
For the tomato and mint chutney:
• Fives tomatoes
• 1 green chilli
• 1 garlic clove
• 1 small bud of ginger
• 10 mint sprigs
• I tbsp palm sugar or brown sugar
• I lemon juice
• I tsp dry pomegranate powder
Method:
To make the pancake:
Mix all the ingredients in a mixing bowl (yep, that simple!)
Add water just to get the consistency of a thick sauce.
Rest the batter for 30 minutes
Cook each pancake individually, frying on both sides with butter for a few minutes.
To make the chutney:
Mix all of the ingredients in a food processor and blend until a smooth paste.
To serve:
Serve it with chutney on the side and some fresh salad.
